The Kosher Salt is a larger granual than table salt but close to Sea Salt size. Alton says that Sea Salt is ok if you can't find kosher...the logic here is: fewer of the larger granuals will adhere to the chicken so the overall saltyness will be less. The finer granuals of table salt will adhere like crazy and you'd be serving up a saltlick.

Wow, good thing I asked!! So where does one find Kosher salt? Would Trader Joe's have it? Couldn't find it at Von's or Ralph's.

There's a large Jewish population here. Kosher salt is readily available. If you want I can pick some up for you and send it ASAP. Interested? Pete

I know that the LA area Vons and Ralphs carry Kosher Salt....maybe your local store manager can bring some in for you...or, try the sea salt...I really don't see and big difference between the sea and the kosher...just make certain the salt is moderately coarse in grind and all should be good.

For those of you who have tried it: the recipe calls for "Kosher Salt". I couldn't find that in the two stores I tried today. What is the difference if I use regular salt or sea salt?

Kosher salt should be rather simple to find. Morton's carries it in their line. Look around where the rock salt is or the jewish/kosher section. Morton's is in a navy blue rectangular box. I keep mine in my salt pig on Big Bertha's shelf.

Berlyn, I don't know if it is appropriate for you to keep your kosher salt in a salt pig. I'll ask the rabbi !
